What determines flight paths?

What more basic question could one have for one's first question to the forum?

I live about 10 miles northwest (inland) of Logan Airport (Boston). About three days ago - and at other times - planes were flying over here pretty regularly on their ascent. Since then, not a single one has gone over. Typically, planes going out of Boston fly onto the ocean and then loop around in whatever direction they are going. Sometimes, the path seems illogical - planes coming from the south overshoot the city and then loop back around clockwise from the ocean.

Generally speaking, how are these paths determined? Does it have to do with certain towns not wanting planes flying low over them, or is it determined by the wind currents? Around here, it seems that the towns over which planes fly low are relatively blue-collar ones, but maybe that's a coincidence.
